Danish royals’ Princess Mary embarks on Sydney salad days

EVEN the future Queen of Denmark was happy to lend a hand as she continued her tour of Australia.


Crown Princess Mary yesterday helped chef Rasmus Kofoed, whose Copenhagen restaurant Geranium was named the world’s best by S. Pellegrino, and Australian Matt Moran of Aria fame, prepare some dishes at Sydney’s Sofitel Hotel.

But Mary, wearing a chic multi-coloured knee-length dress warned her hands weren’t entirely clean.

“I’ve shaken a lot of hands,” she said, before helping to garnish Moran’s seafood salad and Kofoed’s white chocolate and jelly dessert.

Mary sampled the dishes, starting with the salad, and appeared delighted by the taste.

Moran paid tribute to the quality of food being created in Mary’s adopted country.

“There’s no question that Denmark at the moment is probably the hottest country in the world when it comes to food,” he said.

Mary also attended an environmental conference with her husband Crown Prince Frederik, who said Australia could benefit from the clean energy technologies developed in his home country.

He said Denmark’s State of Green initiative had promoted trade in clean energy, food and technology.

“Both our countries are looking to reduce our dependency on oil and gas and coal, at the same time we are not willing to compromise our economic prosperity in order to do so,” the prince said.

“My country has shown that it is possible to maintain economic growth and job creation (and) at the same time move towards a more climate-friendly and green economy.”

The prince also met NSW Governor Marie Bashir while Mary visited the Westmead Cancer Centre at Westmead Hospital.

The couple, who are on a six-day tour of Australia with their four children, were reunited at a black-tie business dinner at Doltone House in Pyrmont last night.
