Plant-Based Peanut Butter Pie

Here is a recipe for our plant based peanut butter pie. It is high in protein and easy to make.

Preheat the oven to 350F. First assemble the crust.  In a food processor or blender add:

  • 1 cup of pitted medjool dates,
  • 1/2 cup of steel cut (or rolled) oats
  • 1/2 cup of pecans (walnuts work too)

Process ingredients until they begin to clump together. Line a pie plate with parchment paper and press the crust dough into the pie dish and up around the sides.  Put in the oven for 12 minutes and remove to cool.

Next we will make the peanut butter filling.

Add the following ingredients to the same food processor or blender:

  • 12.3 oz silken tofu (we use shelf stable silken tofu. If using silken tofu that is kept refrigerated in water, drain excess water first)
  • 3 heaping tablespoons of peanut flour (peanut butter powder)
  • 1/3 cup of salted peanut butter (if using unsalted peanut butter, add 1/4 teaspoon of salt to the peanut butter)
  • 1 cup powdered sugar
  • 1 tablespoon of agave or maple syrup

Process the ingredients until they are fully incorporated and form a pudding like texture. Once the pie crust has cooled add the peanut butter pie filling.

Last we will make the chocolate layer. Add the following ingredients into a heat safe bowl.

  • 3/4 cup dairy free chocolate chips
  • 3 tablespoons of plant milk of choice

Use a bain-marie to melt down the chocolate. A bain-marie is when you put a small amount of water into a saucepan and put a heat safe bowl on top of the hot water. Make sure that the heat safe bowl is not touching the water in the saucepan  Heat the ingredients and mix until the chocolate is melted and the milk has been mixed into the chocolate evenly. Pour this chocolate mixture on top of the peanut butter pie and allow to cool at room temperature until the chocolate hardens before putting it in the fridge. This ensures that the chocolate has a shinier look. Next add chopped raw or roasted peanuts and scatter evenly on top of the pie.

And now you have a super delicious, high protein plant based peanut butter pie!
